I Heart Squash Season

Happy middle of the week my fellow health & fitness nuts. While most bloggers hold up their kids for photos, I like to hold up my dog. Don’t judge. 🙂

2013-10-29 06.19.51I’m trying to mix up my breakfasts more, however, I’m pretty stuck on oatmeal. I love how warm it is for these chilly mornings and it never fails to fill me up. I’ve “tried” to mix up my oats by adding Skippy Dark Chocolate peanut butter instead of regular peanut butter (I know, huge change). I definitely have some searching to do for good oatmeal add-ins! Some fruits I can’t add because they’re not low-FODMAP (like apples/pears). I’m thinking of joining in A Dash of Meg’s November breakfast challenge (i.e., different breakfast every morning). I could really use it!

spaghettisquashAfter putting off this dinner a couple times last week, I finally made Skinnytaste’s Baked Spaghetti Squash and Cheese. At the last farmer’s market, I picked up two huge spaghetti squash. The bake turned out really well, but I thought it could’ve used more “crunch.” With some of the leftovers I added cut up peppers, more spinach, and sunflower seeds. I love being able to buy local squash and make a great dinner from it. It just makes me feel good to support our local farmers.

2013-10-29 18.25.56Are you sick of seeing my feet yet? I hope not! Better than my sweaty face. I got in a couple miles on the treadmill last night before Group Centergy. Like I’ve said in the past, I’ve obsessed with Centergy. I will never, ever, ever give it up. Never. You can’t make me. 🙂

Pumpkin Bagels & Pudding Cakes

2013-10-20 14.47.06Murphy & I wish you a happy middle of the week! The weather here has gotten noticeably cooler so I subjected Murphy to wearing his cute jacket. He actually doesn’t mind wearing it. I may or may not put it on him just so I can laugh at how cute he looks.

Today is my second favorite link up day, What I Ate Wednesday! (hosted by Jenn at Peas and Crayons). Below are my favorite eats from this week!

Last Saturday, hubby and I went out for dinner at a local eatery, The Kangaroost. The Kangaroost originally started as a food truck and now is a brick and mortar restaurant. They serve “gourmet comfort food with local flair.” You can taste such a difference with local, fresh ingredients. I seriously love this place. I had the Maple Glazed Salmon Salad with Gorgonzola Cheese and Citrus Vinaigrette. Their breakfast is amazing too (try the Happy Bellies oatmeal pancakes)!

2013-10-19 18.13.18Hubby picked up some bagels at Panera to bring to work for his birthday. I managed to sneak in a request for a pumpkin pie bagel for moi. It was really good, which means a lot coming from someone like me who doesn’t eat much bread. I topped it with Laughing Cow Cinnamon Cream cheese wedge and a sprinkle of cinnamon. So good!

2013-10-20 07.18.41A more typical breakfast for me in the morning continues to be oatmeal. I stir in 1 TB of chia seeds, sliced banana, and a scoop of peanut butter. It’s filling and satisfying, especially for these cold mornings lately!

2013-10-22 06.16.14I recently tried the Light & Fit blended greek yogurt. I really like that the flavor is already mixed in. I love the banana cream and orange cream varieties. I usually top the yogurt with sliced almonds.

2013-10-19 15.39.36We’ll end with a dessert because all dinners should be finished with some kind of dessert! Gotta treat ourselves a little too! Last week was our second anniversary and hubby’s birthday. Since it’s just the two of us, I picked up a small cake from a local bakery. I took a chance and selected the Snickers Treat pudding cake. I thought it looked really hard, but it was soft once I cut into it. A small slice was all that was needed though because it’s a pretty rich cake. Hubby liked it and that’s all that mattered!

cakeI’m going to a free running clinic tonight, hoping to get some tips on transitioning to winter running and staying injury free! I’m planning on running outside as long as I can this winter!!!

Green Monsters and Veggies Galore

Hope everyone is having a good week! This little guy got a haircut this week! He always looks like a brand new pup when I pick him up from the groomer’s. His hair grows so fast!

murphyIt’s been a colorful, fall week of food in my house. I follow mostly a low fodmap diet and try make my breakfast and lunches primarily fruits and veggies. Here are the food highlights from my week!

foodcollageI always underestimate a good green monster smoothie. I love to have one for breakfast or after a great workout. I’ve saved produce like spinach and kale by freezing it and using it in my smoothies. I hate to think of the produce I used to throw away!

I was excited to use up a jar of peanut butter to make hot oats in a jar! I threw in chia seeds, bananas, cinnamon, and there was obviously peanut butter left in the jar!

My snack between lunch and dinner is usually greek yogurt. I topped Chobani Apple Cinnamon greek yogurt with dehydrated apples and cinnamon. Unfortunately, I probably won’t be eating this again because apples have been giving me stomaches…and they are a no-no on a low fodmap diet due to fructose. Livin’ and learnin’ over here. 

I picked up some vine sweet mini peppers on sale at the grocery store. I’ve never had them before and I’ve been missing out! I love them! They are small, cute, and taste really good by themselves or on a salad.

2013-10-06 13.34.32Every lunch for the last couple weeks has been some form of a spinach salad and a kiwi. I’m obsessed, but I don’t care! Keeps me full and energized throughout my afternoon!

2013-10-03 18.48.41My favorite dinner last week was a saute of mini bell peppers, broccoli slaw, portabella mushrooms, a wedge of laughing cow cheese, and sprinkle of cajun seasonings. It was colorful and delicious.

2013-10-05 19.36.45-1I picked up some pumpkin spice M&Ms to bake with. I was feeling some oatmeal cookies and decided to give a Martha Stewart Living recipe a try. They turned out really good! Not too hard and I like the subtle taste of the pumpkin spice M&Ms.

I have a couple late nights at work ahead of me tonight and tomorrow night for parent/teacher conferences. I’m a busy speech bee that’s for sure! On the plus side though, I’m able to leave at 9:30am on Friday and my hubby and I are celebrating our second wedding anniversary this weekend! Have a great Wednesday, friends!

Banana Cinnamon Protein Pancakes

Hope everyone’s week is off to a great start! I’m thankful we’re halfway through the week because mine has been super busy with lots of meetings and paperwork. Boo.

We pretty much ran out of everything in our fridge/freezer last week, so my usual oatmeal in the morning was a no-go (i.e., no almond milk). I’m addicted to oatmeal with almond milk, chia seeds, pumpkin butter, and banana. Mmmmmm. With a side of coffee, of course.

2013-10-01 06.27.30Instead, I decided to try making protein pancakes. I like to eat something filling in the morning because I hate hunger pains mid-morning. My therapy schedule is pretty “go, go, go” so I don’t have a lot of time to sit and eat a snack. I try to eat a Kashi chewy or KIND bar at 10, but somedays it’s 11 or 11:30 before I have a chance to eat something.

These pancakes are filling, quick to make, and taste delicious!

Banana Cinnamon Protein Pancakes


  • 1 small banana, mashed
  • 1 egg
  • 1/2 cup of quick cooking oats
  • sprinkle of cinnamon
  • 1 TB chia seeds

Mash the banana and egg together until combined. Mix in oats, chia seeds, and cinnamon. Pour 1/4 cup of batter onto a skillet (medium heat). Wait until bubbles appear, then flip pancake. Sides should be a golden/dark brown.

Makes 2-4 pancakes (depending on how large you like them)

*FODMAP friendly for those of us on a Low-Fodmap diet

Top with anything that floats your boat! I used peanut butter, but you can add nuts, syrup, almond butter, pumpkin butter, greek yogurt, pretty much anything!

Hey fellow bloggers, did you know that it’s now October? I’m relatively new to blogging, so I never knew a new month was such a big deal in blogland! Pretty sure almost every post I read yesterday mentioned the month changing. Yes, we know. 🙂 Yes, it’s amazing, but it also means winter is coming and that’s not cool.

I also saw this quote floating around Twitter…hilarious because it’s so true! And I’ll admit I’m one of those girls (just minus the latte and add “coffee”)!

What I’m Loving Lately {Food Edition}

Hope everyone is having a great week! I’ve been crazy busy with meetings at work. No breaks for this SLPeep. I wish I could spend all my time with my kiddos doing speech therapy rather than sitting in meetings. Just a part of the job though. I try to remind myself how much I love what I do and it puts things in perspective. 🙂

I missed the “official” What I Ate Wednesday yesterday because I posted the recap of the half marathon. Instead I’m highlighting some of my favorite eats lately!

oatscollageI have and will always love oatmeal. I get pretty excited when my peanut butter containers get low so that I can make oatmeal in a jar. Some blogs feature overnight oats, but I’m not a fan of cold oatmeal. I like my oatmeal nice and warm any time of the year. It goes perfectly with a hot cup of coffee. My favorite way to eat oatmeal is with 1 TB of chia seeds and a scoop of peanut butter mixed in (and pumpkin butter, but I ran out :().


Festival Foods recently had Kind bars on sale for 99¢ so I snatched up a bunch. I’ve tried the peanut butter dark chocolate and dark chocolate cherry varieties in the past, but this gave me the opportunity to try a bunch of new flavors. My favorites have been pomegranate blueberry pistachio and blueberry vanilla & cashew. I snack on one of these between breakfast and lunch most days.


I celebrated my half marathon finish last Sunday with a sub from Quiznos. I ordered the bacon club with veggies and honey mustard. It was not quite as tasty as the sweet taste of victory, but a close second. 🙂 It definitely hit the spot after the race.


I’ve been majorly slacking with meal planning. I really need to devote time each week to making a plan because more often than not lately we’ve just been eating “whatever.” When these nights happen I usually make an egg white sandwich on a bagel thin with bacon or ham and a wedge of laughing cow. It’s easy, quick and satisfying!


One of my favorite snacks lately has been Back to Nature’s Sweet Potato and Cinnamon crackers with a wedge of cinnamon cream cheese spread from the Laughing Cow.


Another favorite snack is my homemade apple chips with cinnamon. I dehydrate fruits and/or veggies a couple times a week. I’ve saved SO much more produce since we bought the dehydrator. I used to throw away produce when it went bad. Now I either freeze it or dehydrate it if I think we won’t eat it before it goes bad. Yah for saving money!

cookiesCan’t forget about desserts, can we? I have some type of dessert usually with every dinner. My favorites lately have been these Oatmeal Apple Cinnamon cookies from Festival Foods {hey, they have an “Eat Well” label, so healthy right?}. OMG. These are so good. They are soft, chewy, and dense just like a cookie should be.


Do I need to say much more than there are mini marshmallows in the ice cream!!! You know how much I love mini things! If I had to pick one ice cream to eat for the rest of my life, this would be it.

On the food front, I’ve been feeling good lately. I haven’t discovered any new foods that give my stomach trouble. I still watch portion sizes for some potentially problematic foods like apples and almonds (I follow a most low-FODMAP diet). I try to limit the amount of bread I eat. I’ve drastically cut out a lot of bread at meals. For the most part my breakfast is usually oatmeal, lunch a spinach & quinoa salad, and dinner chicken/veggies. This is what is making me feel good at the moment.

Hope you’re off to wonderful Wednesday! I’ve made the transition back to work and I’m still alive! I am the kind of person who loves and needs a consistent routine, so going back to work isn’t so bad. It has been great to see all my coworkers again. I work with some amazing people who truly care about the success and well being of the kids in their class. Woohoo for teachers!!

First up, not an eat, but a drink. I am loving Dunkin Donuts iced coffee lately. I am a iced coffee “newbie” so I’m still unsure exactly how to order it (does it or does it not automatically come with skim milk?), but it usually turns out okay. I’d rather drink an iced coffee later in the day than hot coffee. And every time I go there it’s $0.99! Score!


My husband was actually the one to research and buy a dehydrator for us. I was skeptical at first. I’ve bought gadgets/small appliances and then never used them. I hate to have things in the cupboards just taking up room. I am happy to report I have been loving our dehydrator! It’s so easy to use. My favorite foods to dehydrate are zucchini, bananas, strawberries, and apples. Dehydrated fruit is so easy to pack up and travel with. I’ve been eating banana and apple chips on their own, in oatmeal, and on top of toast.

2013-08-26 15.00.232013-08-26 20.06.48I have been craving fresh, crisp salads lately. Sometimes I find that I’m thirsty and the water in the veggies helps to quench my thirst (and water does too :)). I love the versatility of salads and I usually just grab whatever veggies are currently in my fridge. Veggies in this salad included grilled and marinated portabella mushrooms, hard boiled egg, cucumber, shredded carrots, sliced almonds, and lots ‘o spinach. I could seriously eat this every night.

Isn’t it pretty?

I’m always up for trying a new recipe. In the blogosphere overnight oats are very popular. I tried them a while back with blah results. I’ve always been a hot oatmeal kind of girl. Because I was in need of some inspiration in the kitchen and was looking to try something different, I gave overnight oats another shot. I tweaked this recipe from Caffeinated Runner.

Overnight Oats

  • 1/3 cup of oatmeal
  • 1 container Activia Blueberry Greek Yogurt
  • 1/2 TB chia seeds
  • 1/2 Clif bar
  • Blueberries
  • Scoop of peanut butter

Combine the oatmeal, yogurt, and chia seeds in a container and let sit overnight. In the morning add blueberries, peanut butter, and top with a crushed Clif bar.

I used 1/2 cup of oats and it was a little dry. Did it completely change me over to cold oats? Nope, but it wasn’t bad and I’d try some variation of it again. It’s nice to change things up and eat something cold when it’s so hot and humid out right now!
